In Pakistan fruits & vegetables are rarely dried or processed in any way due to their astringency and a lack of knowledge about suitable preservation techniques. Most farmers are unaware that drying produces sweet and tasty products. The traditional drying product quality is poor and the dried product is dull in colour and often still contains moisture inside and takes long time. Fruits dried in this way are particularly prone to fungal and bacterial growth.
